Sweet Potato Pie Twist

Sweet Potato Pie Twist

Ingredients:

3 Medium Sweet Potatoes
2-9 inch Deep Dish Pie Crust
1 ½ cups sugar
1 ½ teaspoon baking powder
2 sticks of butter
½ teaspoon nutmeg
3 teaspoons lemon flavor*
2 large eggs
1/3 cup whole milk


Boil potatoes until very soft and mushy. Peel potatoes while hot and mix together with potatoes, butter, baking powder, nutmeg, eggs, lemon flavor and sugar. I suggest that you mix eggs in a separate bowl first before adding to other ingredients. Mix all ingredients well in a large bowl. Add milk and mixture should be soft and smooth. Let all ingredients cool down some.

Preheat oven to 350 degrees. Pour sweet potatoes evenly into the two pie crust and bake in oven for 1 hour until potatoes brown on top. Remove from oven and let cool before slicing.
